Individual cakes. The candidate will have to make a minimum of 5 proposals of the following types: mille feuille, tartlet, pie nine, mousse, éclair (see CCTP for details). Mini-viennoiseries with fresh butter the candidate will have to make 2 proposals: pain au chocolat and croissant (see CCTP for details). Small ovens of about 20 g - ready to eat - without pork. The candidate will have to make 4 compulsory proposals - type mini-quiche, chicken mini-friand, mini-cheese puff pastry, achards etc - see CCTP for details). Small ovens of about 20 g - ready to eat - the candidate will have to make 5 proposals - type mini mille-feuille, mini-tartelettes, mini cabbage, mini eclairs, mini operas... 1 sample of each variety is required (see CCTP for details). Fresh - about 900 g - from 6 to 8 people - ready to eat. Crown and bean to be provided. 1 sample is required (see CCTP for details). Brut - 75 cl bottle (see CCTP for details). Fresh - defatted - deboned - derinned. Flavoured - fresh - in jars of 90 to 100 g maximum. Beef minced steak - portion of about 60 g - frozen - beef origin Réunion. For curry - fresh - cubed (see CCTP for details). Fresh - from pork shoulder (see CCTP for details). Pieces of rabbit meat - raw - bone-in - for curry. Net weight: between 35 and 50 g approximately, the candidate will have to make 3 proposals (see CCTP for details). Coloured tablecloths - applicants should offer 4 colours at the same price (e.g. royal blue, red, green, yellow) see CCTP for details.
